The Cajun Mardi Gras Festival is billed as Eunice's largest community event, five days of street dances, live music, Cajun cuisine, crafts, and cultural demonstrations. Parades and runs are part of the program, and the music starts Friday afternoon and keeps going until the parade rolls out Tuesday evening. Food and handmade crafts sit alongside the dancing, so the festival is as much a street party as a procession.
